Changing Fonts. Send a message in Ariel and it is received in Symbols?

Two different unrelated people have told me that their messages arrived in a Symbols font. One message was sent to an AOL address and the other was sent to a Yahoo address. How can a font change in a message from one Yahoo user to another?
